Zucchini with smoked salmon, soy sauce and capers
This is without doubt one of my favorite recipes, because it is so simple, very tasty and particularly beautiful. The combination of sour and salt makes it delicious. I often make it when I have guests over because I can prepare everything well in advance.
Cut the tomato into paper-thin slices. Cut the zucchini into thin slices with a vegetable slicer. Pour some olive oil into an oven dish, add some slices of zucchini, top with a few slices of salmon and spoon on some capers. Put a new layer of zucchini, salmon and a layer of tomato (there’s only one layer of tomato, otherwise you’ll get too much moisture in the dish) some capers and finish with a layer of zucchini and some capers. Give it a good dash of olive oil and soy sauce and season with black pepper (soy sauce and smoked salmon are already salty). Put the dish in the oven at 180° C for 20 minutes. After 10 minutes, pour the sauce that is released along the side of the dish over the whole thing. Pour some more sauce on it just before serving.
