Cod with mustard-soy sauce and tomatoes
Preheat the oven to 350°F.
Finely slice the tomatoes. Remove all the hard, white parts. Make two piles of tomato slices in a baking dish, with one slice half on top of another, like tiles on a roof. Season with black pepper.
Mix the mustard and soy sauce with 2 tablespoons of olive oil. Pour a few spoonfuls of the resulting sauce over the tomatoes.
Place the cod fillets on top of the tomatoes and spoon over the remaining mustard-soy sauce. Bake for 15 to 20 minutes.
Sometimes I make two piles of tomatoes and fish per person, depending on the thickness of the cod fillets and how hungry my guests are. If you use a loin fillet of cod - which is usually thicker - one portion of tomatoes and fish per person is generally enough.
