Chocolate mousse on a spiced cookie base

Love it!

Melt the butter. Crumble the spiced cookies in a food processor.

Mix the melted butter with the cookies and use the resulting mixture to line the bottom and sides of a pie dish. Melt the chocolate in a bain-marie. Separate the egg yolks from the egg whites. Stir the egg yolks firmly into the melted chocolate. Make sure that the chocolate is not warm, so that the egg yolks do not congeal.

Beat the egg whites to a firm peak. Fold gently into the melted chocolate mixture with a spatula.

Pour the chocolate over the biscuit base and decorate with some flakes of grated chocolate. Place in the refrigerator and let set for at least one hour.


Use an attractive cake dish to make this recipe. It is not simple to serve on plates, and there is a good chance that it will break. For this reason, I prefer to present it directly at table in a nice dish.

You can buy ready-made chocolate flakes in the supermarket. Quick, easy, good to eat and good to look at.

You can make this dish one day ahead.
