Oven-baked peaches with mascarpone and nut butter
Preheat the oven to 350 °F (180 °C).
Quarter the peaches and place skin-side down in a small baking dish.
Whip the mascarpone with a fork until smooth, add the nut butter, and stir a couple of times with the back of a spoon. Don’t mix the nut butter and mascarpone too thoroughly; you want to have some white lumps in the mixture. Divide the mascarpone mixture over the peaches and sprinkle some almond flakes over the top.
Bake in the oven for 15 to 20 minutes.
For a keto variation on this dish, halve the number of peaches and double the amount of mascarpone.

- a handful of almond flakes
