Preheat the oven to 180 °C. Spread the ricotta cheese over the bottom of an oven dish. Melt the butter and add 3 to 4 tablespoons of honey. Slice the apples into 1 cm-thick slices, remove the core, and place the apple slices on top of the ricotta. Spoon part of the melted butter and honey mixture over the apples, sprinkle with the sliced almonds and top it off with the remaining sweetened butter.
Bake in the oven for 25 minutes. If you would like to serve this dish as a dessert, one or two slices of apple per person should be enough.
