I don’t feel guilty
My idea is that 70 to 80% of what you eat should be staple foods, foods that truly nourish your body and make you stronger. Think about vegetables, fruit, nuts, seeds, fish, meat; all of these are natural products. 20 to 30% may be what I call ‘comfort food': cake, cookies, pasta, bread, French fries, soda, … These foods should ideally be considered dessert, since the body’s reaction is the same. It’s about the entire 100%, so with both together, for me this is healthy.
That’s why I don’t feel guilty if I eat a dessert or French fries, every once in awhile. I’m a bon vivant and I don’t want to exclude anything. The occasional comfort food is permitted, as long as you realize that it is comfort food. Should you have any doubts: staple food is really tasty. It’s the food that I can’t get enough of, that I eat with gusto and have in large portions.
I want to enjoy real life. It’s about attitude, balance, and being consciously in the midst of my life. It’s a way of eating that’s satisfying and natural.
Tip!
What is a staple food again? Almost all the recipes in my books consist of staple foods. Except the desserts.
