Like Pascale, I make my own granola
I’m opting for a healthier lifestyle and needless to say a healthy diet is paramount to my success. I only eat one sandwich a day and in the morning I prefer oatmeal with seeds and yoghurt. Like Pascale, I also make my own granola and because of her, I’ve discovered hemp and chia seeds. I often prepare the quinoa recipe with shiitake mushrooms or fried vegetables from book II. Pascale’s books are mainly a source of inspiration for me. I don’t follow many of her dishes down to the last letter because I like to give them my own little touch.
I’m a flexitarian, eating vegetables as much as possible but also cutting down on meat and fish. I used to be a vegetarian, but I developed vitamin B12 deficiency, so I started eating moderate quantities of meat again. There are few things that I don’t eat, besides sugar and white bread. That’s also what is so positive in Pascale’s books, there’s little pressure or restriction. The 70/30 rule allows you to put chocolate spread on your sandwich if you so desire. That’s why I can fully enjoy doing so. Pascale’s nutritional regime is not a diet, it’s a lifestyle that suits mine perfectly.
