While I’m on my way to see Annick, I receive a message from her: “I’m making us something tasty from Pascale’s book, see you soon!” I’ve never seen a better view than the one I have as I take a seat on her sunny terrace, which looks out across the rolling hills of Limburg’s fruit-growing region. Annick and her husband have apple and pear orchards. “Next Monday is the start of the harvest”, Annick tells me, and I’m allowed a preview since she has just made one of Pascale’s delicious baked dishes with apples and mozzarella. Cooking with fruit from your own orchard, so tasty, so pure!
Annick has been a fan of Pascale Naessens from day one. She met her more than fours years ago during a cooking workshop for Markant. She and Pascale talked for quite some time and they kept in touch. Annick read the cookbooks, imitated Pascale’s cooking style and was bowled over. Copies of the cookbooks can always be found in the kitchen and next to her bed: to read at night. She lost 22 lbs., but not only that, a number of health problems she hadn’t even been aware of disappeared: stress, exhaustion, PMS. Her husband also says that she has become much calmer.
Annick truly loves to cook and that’s also a reason why she’s able to stick with the pure kitchen philosophy so easily. Prior to this, she’d been on numerous diets but never achieved the desired results and never stuck with them because, more often than not, one has to compromise on taste. “I’m really happy I met Pascale Naessens”, Annick says. “The main difference is that I feel satisfied, but also light, I didn’t know that was possible.”
“Pascale told me that she sees me as one of her ambassadors,” Annick says, “meanwhile a friend of mine is no longer experiencing migraines, thanks to Pascale’s recipes. I’m also proud that I could teach my children about healthy foods. It came in handy when they were living in student housing, real power food to help them study.” If Pascale is giving a lecture near her area, then she always tries to attend, preferably with as many friends as possible.
Annick notices that there is a gradual change occurring in people’s awareness about healthy foods and that Pascale Naessens has played a huge role in that: “With her books, Pascale ensures healthy foods are accessible to everyone.”
