Almond bread rolls

Love it!

Mix all the dry ingredients and then mix in the butter/oil.
Add the eggs and then the vinegar to the mixture.
Knead into a dough. Shape the dough into balls and place on greaseproof paper in an ovenproof dish. Sprinkle some sesame seeds over the top (optional).
Bake the rolls for 20 minutes in a preheated oven at 180 °C (375 °F).

Tip: bicarbonate of soda
Bicarbonate of soda is a mineral salt, also known as baking soda. This salt used to be common household remedy for restoring the acid-base balance. Bicarbonate of soda is also used as a raising agent in cakes. However, this only works if you add something acidic to the recipe, which is the cider vinegar in this case.

You will be surprised at how delicious this is! These crunchy rolls are mostly made up of nuts and egg, so you can combine them with anything. They're great with just a bit of butter, but a slice of ham makes them extra delicious.

  • 200 g (1 cup) almond flour
  • 40 g (1/4 cup) coconut flour
  • 2 small teaspoons bicarbonate of soda (ca. 7g [1/4 oz])
  • 3 tablespoons cider vinegar
  • 50 g (2 oz) coconut oil (or butter)
  • 4 eggs
  • sesame seeds (to garnish)
